Annie Chun’s Soy Ginger Noodle Dinner

I combined frozen edamame and carrots with tofu and Annie Chun’s Soy Ginger Noodles. I marinated the organic tofu in Annie Chun’s Soy Ginger sauce for a few minutes and used the same marinade while cooking. After the tofu was semi soft, I mixed the veggies in and added some more sauce.

In another pot, I cooked the noodles by following the instructions on the box. They were right on the money with cooking time. Once the veggies were cooked, I combined the noodles, veggies and tofu and prepared to eat.

The end result was rather boring. The Soy Ginger Sauce was sub par. I really expected it to be much better and I was rather disappointed. The noodles and tofu soaked up the sauce right away, but it really did not work together.

Rather disappointed, I tried to make it better by adding more sauce, which didn’t help. One more Annie Chun meal left to try. So far, I’m 50/50, so come back and see how it pans out.

    Grilled Tofu, stir fried baby broccoli and three mushrooms cooked in Annie Chun’s Stir Fry Sauce over Annie Chun’s Organic Chow Mein

    That’s a mouthful, literally. I made dinner for Lauren and Claudio before Claudio had to return to work in New England. I tried to do something different and it worked out well. I love grilling tofu and I think I’ve become good at it. First I marinated the tofu in Annie Chun’s Stir Fry sauce. Not too much, just enough of the sauce to enhance the tofu’s flavor with garlic, onion, sugar cane and sesame from the sauce. The rich really works well with a firm block of tofu.

    I had the tofu grilling up while I chopped the mushrooms and baby broccoli. Then, I threw the chopped mixture into the pan with a small amount of the Annie’s Sauce. While everything cooked up slowly, I followed the easy to follow instructions for the Annie Chun’s Organic Chow Mein.

    I really enjoyed the dish. It had a nutty/woodsy flavor from the shitake, baby portabellos and oyster mushrooms. The tofu, from Trader Joe’s, is organic also and very cheap at $.99! The chow mein was perfect if you follow the directions.

    Everyone really like the food. I thought overall, it was excellent and I’m excited about trying it again.

    I have some ideas for the future of what to add, but I guess you’ll have to wait to find out.

    One of my concerns was the sodium. There is a large amount in the noodles. Organic does not always mean healthy, so be careful and take note. There is a good amount of protein though!
