Vegetarian Pierogie Dinner

Ingredients:

1 large green bell pepper
1 small yellow onion
2 packages of pierogie from Piast. One potato and cheese, the other sweet cabbage
1/2 block of cheddar or jack cheese
1 package of Organic Tempeh Fakin’ Bacon Strips

The way I make pierogie is simple, but time consuming. First, boil, then fry lightly until crisp. Combine all other ingredients into a dish and cover with cheese then bake on 300 until the cheese melts. I added some sweet and spicy Tabasco brand sauce for color and a bit of flavor.

I think it comes out nice and tender, but not too crispy and not too soggy this way. The tempeh did not really match the other flavors, so next time, I won’t be adding it in. However, Lightlife does make good stuff. I’ve also added the tempeh onto a veggie burger and it worked really nicely. Try it out.

Overall it was good. I’ve never had sweet cabbage pierogie and I have to say, it was so good. It reminded me of chinese spring rolls.
