No-Bake Peppermint Joe Joe’s Cheesecake Jars
Ingredients
  • 16 candy cane sandwich cookiesI used Trader Joe’s Candy Cane Joe-Joe’s
  • 2tbsp melted butter
  • 1-8 oz. package cream cheesesoftened
  • 1tsp vanilla extract
  • 4tbsp cane sugardivided
  • 1cup heavy cream
  • 4-4 oz. mason jarsor any single-serve container
Instructions
Whipped Cream
  1. Whip heavy cream in chilled bowl with chilled beaters
  2. Add sugar and vanilla
  3. When stiff peaks form set aside in a new bowl, refrigerate
Cookie Crust
  1. Crush cookies in a bag or food processor
  2. Add melted butter and combine until it just comes together
  3. Spoon a few tablespoons of cookie crumbs into bottom of each jar to create thick layer, pressing down to compact
Candy Cane Filling
  1. Combine cream cheese and sugar in bowl of mixer, whip until smooth and light
  2. Fold in chilled whipped cream, until combined
  3. Layer cream cheese mixture over pressed cookie crumbs, add additional layers of cookie crumbs and cream cheese alternating until jar is just under full, so lids can be added
  4. Garnish with cookie crumbs and refrigerate if not eating immediately.
